Wine of the Week: Domaine Schoffit Pinot Blanc Vieilles Vignes Sec 2016

Light yellow in color and made from old Pinot Blanc vines averaging 50 years, this wine features a mineral-driven nose with hints of lemon custard and flint. The palate expresses yellow apple, pear and quince flavors with a slightly tropical edge similar to white southern-region Burgundy. The full mouthfeel and generous body are followed by a long finish hinting at tart almond skins. Drink this with roasted white meats, quiche or a wild-mushroom pizza. The domaine is a combination of sustainable and biodynamic farming.
